This 'pastitsada' was the combined creation of five of Corfu's top chefs and was produced as a sample of the very best of Corfiot cuisine at a semniar this week in Corfu Town hosted by the Hellenic Chefs' Association. The pastitsada started life as equal quantities of beef and onion and a full 40 minutes of constant stirring produced the thick aromatic sauce that accompanied the finished dish. Whatever type of food you like when in Corfu, you have to try this and it is available at several of the restaurants in the village.
